Happy v-day all! I don't really like valentines day but my partner does. I guess I will suck it up. ;) I'm excited to go out this weekend to Portobello in SE Portland, Or. They have tons of delicious vegan/plant based foods. In fact that is all they serve.
I keep having people approach me and tell me I am glowing or look great. I can see that my love handles are slowly disappearing, my face is a lot skinner and my jeans fit differently coming straight from the dryer.
Breakfast:
Apple Pear Cilantro Smoothie
We thought the cilantro might taste a little bit weird but it actually tasted delicious!! It tastes like summer.
Lunch:
Cooked some quinoa in my rice cooker added tomato, avocado, parsely and pine nuts. The quinoa kind of sticked to the bottom of the cooker, but it does the job. I quickly made some cashew cheese with a little bit of water and lime.
Dinner:
I ate some quinoa from lunch with adding kale and cucumber. I love leftovers and leftovers love me!
